Breakfast is the most important meal of the day so it is important to make the
morning meal as healthy and nutritious as possible. These pancakes use whole
grains so they are packed with fibers and the nutrients you need to keep you
going until lunch.
Serve; 10-12 pancakes
Ingredients:
1 cup whole wheat flour
1/2 cup all purpose white flour
4 tablespoons flax seed, ground
2 tablespoons brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 pinch of salt
2 cups low-fat buttermilk
2 eggs
2 ripe bananas, mashed In a bowl, whisk the flours with the ground flax seeds, sugar, baking powder,
baking soda and a pinch of salt. In another bowl, mix the buttermilk with the
eggs and bananas then pour this mixture over the flour. Give it a quick mix just
until well combined.
Heat a large frying pan over medium flame and slightly brush it with vegetable
oil. Drop spoonfuls of batter into the hot pan. Cook it 3-4 minutes on both sides
until fluffy and golden brown.
Repeat until you run out of batter. Stack the pancakes in a plate. Serve them with
your favorite toppings
