Fragrant and chunky, these cookies are an excellent and healthy treat that
combine the sweetness of the bananas with the bitterness of the chocolate chips.
Serve 2-3 dozen
Ingredients:
1 cup all purpose white flour
2/3 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
5 oz butter, room temperature
1 cup sugar
1 egg
1 teaspoon vanilla extract
1 ripe banana, mashed
1 cup rolled oats
1/2 cup dark chocolate chips
1/2 cup walnuts, chopped
1/4 cup raisins
1 pinch of salt
In a bowl, cream the butter with the sugar and salt until pale in color and fluffy.
Add the egg and mix well, then stir in the flours, baking soda and baking
powder, as well as the mashed bananas mixed with vanilla. Fold in the rolled
oats, chocolate chips, walnuts and raisins.
Line a baking tray with parchment paper and drop spoonfuls of batter on the tray.
Bake in the preheated oven at 375F for 10-15 minutes or just until the edges are
slightly golden brown.
Let them cool in the pan then transfer them in an airtight container or cookie box
to store
